The California Tri Tip is a huge hit on the west coast that is quickly gaining in popularity around here now. While we call it a roast it is more of a really thick steak that has as nice fat cap on it. This is meant to be cooked low and slow as well. You can cut it up like a steak or slice it and enjoy it that way too.
